At my house, the jobs are apportioned to whoever is most annoyed at a job not being done right. Neither of us cares particularly about the wash so long as it’s clean, so the fitted sheet gets smooshed into a roughly square-shaped mass and put on the shelf in the linen closet.
If the flat sheet comes loose from the bed: the elastic holding the edges in shape is starting to weaken from age, or the sheet has been washed so many times it’s shrunk, or you have one of those built-up mattresses where the correctly-sized sheet doesn’t quite fit and you should try a fitted sheet the next bed-size up.

Piping up to be That Boring Person… the actual answer is that, as you fold the upper half onto the lower half, you flip the corners inside out so that they fit neatly inside the other two corners and the folded-over edges are lying on top of the sheet. Then spend as much time as suits you on arranging these folded-over edges so they’re fairly smooth, and then fold the resultant rectangle as you normally would.
It’s hard to describe, so I definitely recommend looking up a video, which is how I learned the technique, but it can absolutely be done.

A fitted sheet is actually the projection of a 4 dimensional object onto our reality and as such is impossible to to fold.

I solved the problem years ago by not using fitted sheets. A bed made with the correct size sheet, and properly folded corners will stay like that until the next wash, despite both of us tossing and turning.
