    As usual, I made 4 times as much as we needed, because I always think “family size” in the kitchen.

    Boy and his wife were finally able to get a place and move out with the twins. We still watch them four days a week so they can both work, but we have a house that is just us!

    And I am learning, slowly, to cook for two. Not as easy as it sounds.

    Depends on how spicy and if there’s an appropriate amount of coconut to tamp down the excessive spice I like. Plus the whole Central Florida to Minneapolis distance thing.

    It looks tasty. Love me some peanut sauce. Did you ferment fish sauce too? Old zebra fish collections from way back when.

    I’m probably confusing pad woon sen, green curry, and what you’re doing because so long ago since…damn you pandemic.

    Recipe? I don’t need no steenkin’ recipe. Tofu, peanuts, peppers, onions, salamander slices, garlic, tomatoes, ginger, cumin, turmeric, coconut milk, curry powder, you know, the usual.

    Oh wait, no, I left out the salamanders. This is the vegan version.

    Not whole peanuts. Chopped fine in my ninja.

    A local Malaysian place I used to frequent before they closed around the 2008 economic meltdown loaded me up on curry spice. The matriarch would check on me because the off menu kimchi they gave me for free was…ummm…off the chain. Kimchi isn’t even Malaysian. They made it for themselves. Previous Korean gf clued me in on that stuff and the bbq.

    Turned my tobacco dipping best friend green at mom and pop hole in the wall Thai place with fish sauce. They were very impressed I knew what pad woon sen was and made it special off menu because I asked politely. My friend got really put off after trying fish sauce. It wasn’t Surströmming or anything cray cray Scandinavian like that. Just fish sauce. Wussies!

    I love curry, red green or brown, but tofu is poisonous so I will have to decline. It looks tasty though.

    Eritrean lentils are my quick curry dish, and butter chicken my favorite slow cooking curry recipe.

    Mmm! Looks much like the pumpkin curry my sister makes, just replace the tofu with cubed fresh pumpkin and don’t change any of the other ingredients.

    I guess on steeping it takes on the flavour of whatever steeping medium.

    Tofu tastes of tofu. No need to add to its flavour which I like since I first made it myself over 20 years ago. I don’t make it now, but I will happily eat it as is, out of the packet. It doesn’t even need cooking as it is cooked twice during it’s manufacture.
    If frozen it develops a sponge-like texture when thawed due to the ice crystals tearing it apart. In this state it more readily incorporates other flavours. A sesame oill, soy or tamari and ginger marinade fills it nicely.
    Stir fried with greens and garlic, on a pile of noodles. Yum!
    So if you don’t like the flavour of tofu you can fix that.
    Probably less toxic than a piece of meat due to tofu’s low growth factor protein content, and lack of saturated fat. Can affect breast tumours I hear because it has some oestrogen-like properties, so maybe not good for everyone.

    I’ve got no problem believing someone in the world has a similar reaction to tofu.
