I did promise a couple Passover recipes.
This is one Mom found and then slightly modified. The original idea was a macaroni and cheese, but for Passover. Because matzah farfel (basically crushed matzah) is used, it turned into a very dairy casserole. And it is delicious… assuming you aren’t vegan or lactose intolerant. If you’re either or both of those things… you might want to skip this one…

So…
First things first…
Ingredients:
-3 large eggs
-3.5 cups matzah farfel (crushed matzah)
-1 cup 2% milk
-0.25 tsp white pepper
-0.5 cup (1 stick) salted butter
-16 oz fat free sour cream
-8 oz cheddar cheese
Directions:
1. Preheat your oven to 350 degrees F. Grease a 2-quart casserole dish.
2. Pour the matzah farfel into a medium-sized bowl.
3. Crack 2 of the large eggs into a bowl, beat them with a whisk, and pour them over the farfel.
4. Shred the cheddar cheese.
5. Combine the milk and pepper, then beat 3rd egg into the mixture.
6. Now chop the butter into 16 piece but cutting in half long-wise, then slicing short-ways into eighths.
7. Now that you have everything prepared, grab your casserole dish and layer your ingredients into it as follows:
- 1/2 of the farfel mixture
- 1/2 of the cheddar cheese
- 1/2 of the sour cream (don’t let the sour cream spread out, otherwise it’ll seal and the whole thing won’t cook properly)
- 1/2 of the butter
Then repeat that with the rest of the ingredients.

8. Pour the milk, egg, and pepper mixture over the top of the now layered mixture.

9. Cover the casserole dish and bake in the oven for 30 minutes until browned.

Allow to cool before serving! This makes about 4-8 servings, depending on how you want to serve it. It is mushy, obviously, but serves fine with a spatula.
