To expand your store of Canadianisms -- Around this time of year, school groups and other folks head out to sugar bushes to take a tour of the operations, typically including a wagon ride, making tire de neige (snow taffy) by pouring maple syrup on snow and then rolling the mix up on a stick, and a special meal that heavily features maple syrup and includes brown beans, ham and potatoes. Other entertainments, educational components and things like ziplines may also be included. The whole trip is called sugaring off, as in, the class went sugaring off on Thursday. Haven’t been in decades, miss it dearly.
