I’m supposed to be breeding spiders in the lab today, but then a combination of factors are interfering. Poor Mary got held over at work to cover for someone who was absent, and didn’t get home until 3:30am. I’m trying to make a nice curry for lunch to compensate, and then the plumbers showed up to install a shiny new toilet. Of course they discovered problems — this is an older house — so they’re installing a new base and having to put in some new PVC pipe. I’m trapped here, cooking and cleaning and guiding plumbers through the labyrinth of our basement, and the spiders will have to wait, because I’m being the responsible househusband.
The curry is going to be delicious, though. Tofu, chickpeas, onions, fresh garlic and ginger, tomatoes…too bad you’re not here.
Spiders will be the post-lunch entertainment.

What? No raisons in your curry? I like the way raisins swell up full of wonderful curry flavor and sweetness. Also celery. And you cannot have too much onion in a curry.

I have never had raisins in a curry. I did include a mountain of chopped onion, and like 8 cloves of garlic.

Cube the tofu, cover it with corn starch, fry it in olive oil until it starts to brown, lightly. Toss in all the onions and saute until they start to caramelize. Add the finely chopped garlic and ginger, stir briefly, Then add a couple of tablespoons of curry powder, stir some more. Add chopped tomatoes and a few cups of vegetarian broth, and the chickpeas. Let simmer for a while. Add some coconut milk. When it’s delicious, spoon it over rice.

The easiest stuff in the world – if you are tired after work – is nuking stuff with the microvawe oven. Not a culinary triumph, but it works. Also, my adopted cats need to fall asleep with a full tummy before I can do anything in the kitchen that smells good.

Make big batches of curry. It freezes well. Out of the freezer and into a microwave. This is also good for workplace lunches. I have never cooked curry with tofu, but mushrooms works quite well also.
