First up, Frybread. If anything is holy, it is wonderful frybread. Makes me long to be back at the Oceti Sakowin camp, stuffing myself on Melania’s frybread. If there were gods, this would be their food.

Of all the foods most commonly associated with Native American culture, frybread has long been at the center of the table. From one end of the continent to the other, from region to region and tribe to tribe, there are hundreds of recipe variations on the tempting and tasty treat.

Whether inspired by ingredients found close to home or by those from locales a bit more exotic, each of our gourmet variations on frybread bring a creative alternative to the classic treat, and can be down-sized for snacks or appetizers.

Plains Taco

Filling:

2 pounds ground elk meat

2 tablespoons rendered duck fat (may substitute grapeseed, olive, or sunflower seed oil)

2 tablespoons red chili powder

½ teaspoon garlic powder

Salt and pepper to taste

Garnishes:

1 cup endive leaves, rinsed, patted dry, ends trimmed

½ cup cherry tomatoes, quartered

¼ cup diced scallion

½ cup grated provolone cheese

¼ cup pine nuts, whole or coarsely chopped

Optional:

½ tablespoon sliced or diced habanero or serrano pepper

In a large skillet, heat duck fat to melting, or add oil of choice. Heat on medium-high heat for several minutes. Add meat and sauté until brown. Add chili powder, salt and pepper. Mix well, and break up any big clumps of meat.

Spoon meat mixture onto prepared fry breads. In order given, add equal portions of garnishes to each fry.

Serve immediately. Makes 4 servings.

Prairie Taco

Filling:

4 quail, fresh or frozen and thawed

1 tablespoon sunflower seed oil

4 strips bacon

¼ teaspoon ground sage

Salt and pepper to taste

Garnishes:

½ cup tomatillos, quartered

¼ cup sliced green onions, including stalks, rinsed, trimmed, and patted dry

½ cup sunflower sprouts

½ cup grated smoked gouda

Bacon from pan, crumbled or coarsely chopped

¼ cup sunflower seeds, raw or toasted

In large skillet, add oil and quail. Roll quail in pan to coat evenly with oil. Place bacon strips along sides of quail and cook over medium heat, turning quail after three to four minutes. Increase heat to medium-high/high, and continue cooking quail just long enough to brown, about one to two minutes on each side. Remove from heat, place on paper or cloth towels to allow excess oil to drain. Continue cooking bacon until brown and crisp, then remove from heat and drain on towels. When cool enough, remove meat from quail in long, downward, stripping motions. Spoon onto prepared fry breads. In order given, add equal portions of garnishes to each frybread. Serve immediately. Makes 4 servings.

Rosemary Diaz (Tewa) also has Frybread rules and a recipe for basic frybread at ICTMN, which is sporting a brand new look. Given all the pheasant hunting which takes place here every year, I’d be more inclined to substitute pheasant for the quail in the Prairie Taco, but frybread and its toppings is a matter of endless variation, so go Native, and have fun!

First-year architecture and urban planning students at the Estonian Academy of Arts have designed and created a shelter titled ‘READER’, a place where people can get away from their daily routine. Among other structures developed by the students, the shelter is located in the national park Lahemaa of North-Estonia. READER was constructed within five days and is made of pine plywood panels. The whole construction stands on three beams supported by nine adjustable legs on the ground. The exterior appears to be a basic cube, whereas in the inside visitors experience the undulating cave-like contours.
People are invited to enter the shelter to escape from their hectic lives into the pages of fiction and fantasy. The winding contours inside the shelter are an attempt to imitate the pages of a book, and metamorphose from a wall into a bench that seats three people. The ribbed walls usher in diffused sunlight which makes the shelter a comfortable niche, where anyone can come with a book and forget about all their troubles.

Cool Stuff Friday: Solstice Heartwarmers.

We’ll start with Joy, a photo from Giliell, Weihnachtsfeier (Christmas Party). Such a wonderful moment, and shows what concern, care, and inclusion can mean to refugees, who are in serious need of all those things, from everyone. Many hugs to Giliell and all her colleagues, who make life better for people. Looking at this photo, I put on A Tribe Called Red and a host of wačipi music, and started dancing.

Next up, we move to Poland, and this lovely, poignant ad, which addresses the fact that so very many families are now separated and very far away from one another:

From there, we go to London, where the owners of a restaurant decided no one should be alone on Christmas day, and they shouldn’t have to pay for a meal, either.

Restaurant manager Irsan Can Genc told CNN that the idea for the free Christmas meal came after a local elderly woman walked into the restaurant in early November asking whether anyone could help her close a window.

The staff obliged, and the woman mentioned afterward while thanking them that she would be alone for Christmas.

For Shish owner Serdar Kigili, the woman reminded him of his mother in Turkey, whom he had not seen in five years, according to the news network.

The staff began planning what they could do for people in similar situations.

“It’s not about religion, language or culture,” Genc told CNN. “It’s about community.”

Santa vs Jesus, Oh the Blasphemy!

Santa vs Jesus, made by London company Komo Games, is played by two teams – one for each of the festive figures – who battle through challenges in an attempt to win the most “believers”.

It was funded via crowd-sourcing site Kickstarter which said it was the “most complained about game in history”.

But fans have called it “good fun”.

Danny Webster, spokesperson for the Evangelical Alliance, says he believes a board game helping people learn about Jesus at Christmas would be “a great innovation” but he has a problem with the Santa vs Jesus game because “it trivialises Christian belief and equates them both as fictional characters.

“With over 4 out of 10 people in the UK mistakenly thinking that Jesus was not a real historical person, this game won’t help correct that.

No, no, that’s not mistaken thinking. That’s actual thinking! There isn’t much evidence for the historicity of Jesus, and pretty much none for all those bloodsoaked fables in the bible.

“At its heart Christmas is about celebrating the birth of Jesus and the gift of life he brings.

No, no it isn’t. The church manufactured that nonsense about Jesus being born on 12/25, in order to destroy numerous winter solstice festivals, rituals, and the worship of other gods. When you’re relatively up on your mythology, you come across a considerable expanse of gods who all pre-dated the xtian mythos by hundreds to thousands of years, and it’s easy enough to see just how much the writers of various bits of the bible cribbed from earlier religions, because man, those stories were good! Khrisna of India. Thammuz of Syria. Esus of the Celtic Druids. Mithra of Persia. Quexalcoati of Mexico. All were crucified gods, and all met their fates hundreds of years before Jesus appeared on the scene. We’ll just have a look at Horus:

Born of a virgin, Isis. Only begotten son of the God Osiris. Birth heralded by the star Sirius, the morning star. Ancient Egyptians paraded a manger and child representing Horus through the streets at the time of the winter solstice (about DEC-21). In reality, he had no birth date; he was not a human. Handling the threat: The God That tells Horus’ mother “Come, thou goddess Isis, hide thyself with thy child.” An angel tells Jesus’ father to: “Arise and take the young child and his mother and flee into Egypt.” Break in life history: No data between ages of 12 & 30. Age at baptism: 30. Subsequent fate of the baptiser: Beheaded. Walked on water, cast out demons, healed the sick, restored sight to the blind. Was crucifed, descended into Hell; resurrected after three days.

So stuff the outrage and nonsense, Mr. Webster. Oh, don’t be celebrating that crass, paganistic xmas, either. No tree, gifts, or Santa for you. No.

Cool Stuff Friday.

On this episode of Monster Lab, Ed Edmunds shows you how to sculpt a very cool-looking alien zombie head to be cast as a 3/4 Halloween mask. A 3/4 mask fits farther over your head than a half-mask, so no elastic string or tie is needed.

First off, Ed goes over the sculpting tools you’ll need, most of which are basic things you likely already have around the house or shop (brushes, bucket, knife, spray bottle) and a few carving tools that are easily acquired. For the sculpting medium, he recommends WED clay. You can get 50 lbs of it for around $25 (minus shipping). After he runs through the basic tools, he goes over some nice-to-have tools if you enjoy your intro to sculpting and decide you want to dive in deeper.

Below is the only exotic tool he highly recommends that you may not be able to get at your local craft store, a serrated double wire sculpting tool that has a triangular wire on one end and a circular wire on the other. The steel wire is serrated and this tool is used for cutting, shaping, and digging out clay material around places like the eye sockets.

One thing I like about this video is that Ed tried to keep all of the tools required as minimal as possible so that newbies could try their hand at it. On that note, for the armature, rather than using a professional head/bust form for modeling, he made a crude one out of 2x4s and a piece of plywood. He also recommends a Lazy Susan, but it’s not required.

Another thing I love about this video, and all well-done instructional videos, is that it makes the process look approachable, very doable. Even if you have no sculpting experience or don’t see yourself as particularly artistic (stop that!), if you create a set-up like he has, gather the basic tools, and carefully follow along, I can almost guarantee that you’ll surprise yourself and end up with something that’s pretty darn impressive.

Les Diners de Gala.

Published only once in 1973, Les Diners de Gala was a dream fulfilled for surrealist artist Salvador Dali who claimed at the age of 6 that he wanted to be a chef. The  cookbook pairs 136 recipes over 12 chapters (the 10th of which is dedicated to aphrodisiacs) with the his exceptionally strange illustrations and collages created especially for the publication. The artworks depict towering mountains of crayfish, an unusual meeting of a swan and a toothbrush in a pastry case, and portraits of Dali himself mingling with chefs against decadent place settings. Recipes include such delicacies as “Thousand Year Old Eggs”, “Veal Cutlets Stuffed With Snails”, “Frog Pasties”, and “Toffee with Pine Cones”.

…Despite the unusual ingredients and preparation methods, many of the old school recipes in Les Diners de Gala originated in some of the top restaurants in Paris at the time including Lasserre, La Tour d’Argent, Maxim’s, and Le Train Bleu. Lest you think anything in the book might be remotely healthy, it offers a cautionary disclaimer at the outset:

We would like to state clearly that, beginning with the very first recipes, Les Diners de Gala, with its precepts and its illustrations, is uniquely devoted to the pleasures of Taste. Don’t look for dietetic formulas here.

We intend to ignore those charts and tables in which chemistry takes the place of gastronomy. If you are a disciple of one of those calorie-counters who turn the joys of eating into a form of punishment, close this book at once; it is too lively, too aggressive, and far too impertinent for you.

…Only around 400 copies of Les Diners de Gala are known to survive, most of which sell for hundreds of dollars. However Taschen has finally made this rare book available for the first time in 43 years as a new reprint currently available for pre-order.

The New Gods #1 (Reprint)

One of the comics featured in this week’s roundup is a digital reprint of a classic Jack Kirby comic. Kirby, longtime collaborator with Marvel icon Stan Lee, helped create famous characters like The Hulk, The Fantastic Four, and the X-Men. Unlike the more straightforward, BAM! POW! creations of Lee, Kirby’s written and illustrated works are tinged with the weird, the cosmic, and the symbolic. If readers try the reprint of New Gods #1 (reviewed below) and like what they read, other Kirby must-reads include the OMAC series, Devil Dinosaur, and Machine Man. In these comics, it’s clear Kirby didn’t care if you couldn’t keep up with his breakneck speed and garbled, grandiose language. This is old-fashioned science fiction, which neither strives for accuracy nor ease of readability, but falls somewhere wonderfully in-between.

Originally published in 1971, The New Gods tells the story of a battle between the forces of good and evil, with the New Gods (a group of super-powered heroes) battling the evil Darkseid. The main hero, Orion, rides around on little golden leg harnesses, uses his “Astro-Force” to blast away his enemies, and comes off like a grumpy old man as he quarrels with those trying to help him. This comic is baffling in its own self-reference and complexity, and biblical in its language and scope, but it’s absolutely a must-read for those who gravitate toward the weird and extra-dimensional. The closest piece of fiction one could compare The New Gods to are the latter novels in the Dune series, by Frank Herbert. And Kirby’s artwork is unparalleled in its ability to conjure grandeur with an economy of lines.

Jim Henson’s Labyrinth Tales

Artist and writer Corey Godbey captures all of the charm and mystery of Jim Henson’s Labyrinth, and turns that into a storybook for kids. Less of a true comic than a series of full illustrations with narration, this book is so beautifully illustrated it will absolutely stick in the minds of young ones. The illustrations by Godbey are honeyed and sweet, and the world presented is simply magical. Though children’s books aren’t often covered in this column, this work is an absolute must for readers with young children.

Black Hammer #3

The heroes of Black Hammer used to be comic book heroes with rich backstories and varied interpersonal lives, but now they’ve been retconned. After a multidimensional crisis writes them out of their own stories, they’re forced to live in a small, timeless farming town. This issue focuses on Barbalien, the alien barbarian, as he attempts to adjust to his new life, and as he reminisces on how he got to earth to begin with. This is a hugely imaginative comic with wonderful art by Dean Ormston. If the series pitch intrigues readers, it’s probably best they go back to the start and try out issue #1.
